Sweetcorn & Red Pepper Soup

This is a super easy recipe. For 4 people use about 5-6 ears of sweetcorn 🌽 (shave kernels off), 4 - 6 spring onions, a large sweet potato 🍠 chopped, a chopped red pepper and 3-4 crushed garlic cloves. Chuck it all into a saucepan with a bit of coconut or olive oil to sweat and soften then add 4 chopped celery sticks, a red chilli 🌶 finely chopped (or less to suit) and 800ml - 1 litre of bouillon or veg/chicken stock (depending how thick you want your soup). Simmer for 20 mins, whizz up and serve with fresh herbs 🌿, some sweet corn, chopped red pepper and seeds if you wish. Job done. This can also be made without the red pepper and canned/frozen sweet corn of course too.
